One of the most pleasing aromas in the world is that of fresh tomatoes prepared for canning. While most vegetables will dissipate during the winter months, isn’t it great to know that people can still enjoy a healthy menu due to canning their favorite foods at the end of their season.

Ginger not only livens up so many recipes but it also is used to ward off colds and flu!!

Ingredients:
1 pound of fresh or thawed frozen baby carrots
1/3 cup of orange marmalade
2 tablespoons of butter
2 teaspoons of Dijon style mustard
1/2 teaspoon of grated fresh ginger

Instructions:

Cook carrots in saucepan and drain or steam them, whichever you prefer.
Return carrots to saucepan and stir in the butter, mustard, marmalade and ginger.
Mix well.
Simmer on medium setting stirring frequently until carrots are glazed.
